Natural Occurrence of Fumonisin B©û in Korean Rice and Its Processed Foods by Enzyme-Linked Immunosorbent Assay

Abstract
A lot of 150 rice sample collected in 1995 were analyzed for natural occurrence of fumonisn B©û (FB©û) by a competitive direct enzyme-linked immunosorbent assay (cdELISA). The recoveries of FB©û from the sample ranged from 100-104% when FB©ûwas spiked at levels between 5-1,000 ng/g, and the detection limit was 3 ng/g. Fumonisin B©û was detected from 24 out of 60 polished rice sample in a range between 4-144 ng/g, from 27 out of 30 rice cake samples in a range between 5-98 ng/g, and from 19 out of 30 rice snack samples in a range between 3-43 ng/g. The mean FB©û levels among the positive samples were 41, 42, and 18 ng/g for polished rice, rice cake, and rice snacks, respectively. Fumonisin B©û was not found in any of 30 brown rice sample.
